I know it’s been a while since I’ve had a chance to post some of our more recent amazing creations, but hopefully you’ve all been checking out our weekly favourites on Facebook. For those of you who aren’t already fans, make sure you check out our fab fan page.
All our Sydney readers will know how hot it’s been here over the past few days, and weather like this combined with chocolate ganache and fondant can present us with a few “challenges” here. Luckily our team are the absolute best, and despite some less than perfect conditions there was some absolute stunners this week:

In course news, the (now very tired) Handi finished up our Brisbane workshops at the Bread House, following on from his final classes in Melbourne. Most of you will know just how excited we’ve been all year about finally getting up to Brisbane to meet our QLD friends, and the experience went above and beyond our expectations. From all reports you were all fantastic to work with and we would like to extend a big thanks to the lovely Danielle our facilitator as well as all the lovely people at the Bread House. But most of all thank you to everyone who attended our classes, we can’t wait to see you again!
Not to be outdone in , Anna Maria battled through larangitis to teach a fantastic Madhatter class this weekend. For those of you who are unfamiliar with the Madhatter, it is a notoriously difficult shape to master (although you’d never think so to watch AM and Fran whip them up the way they do!) and the results here speak for themselves…well done Basics 109!

Hi there wondering if you have given any thought to doing a webinar on Mad Hatter cakes or a dvd? I live in the U.S. and can't find anyone near who can teach a class. I would like to know how you get such straight top edges. I would appreciate any assistance!
